Jo Abbott’s Vegetarian Broth

Why Broth? Traditional bone broth focuses on the consumption of high levels of vitamins, minerals and specific proteins called amino acids such as glycine, praline, hydroxyproline and arginine – better known as collagen. Collagen is the major insoluble fibrous protein in the extracellular matrix and in connective tissue. In fact, it is the single most abundant protein in the animal kingdom. There are at least 16 types of collagen, but 80 – 90 percent of the collagen in the body consists of types I, II, and III.  Collagen types I and II are concentrated in the skin, bones, tendons, and ligaments, while type III is found primarily in the joints (REF). Epidemiology Adolf Jarisch, an Austrian dermatologist, and Karl Herxheimer, a German dermatologist) observed specific reactions in patients who were being treated for syphilis with Salvarsan, mercury, or antibiotics and termed the reactions as the Jarisch–Herxheimer reaction.  Jarisch thought that the reaction was caused by a toxin released from the dying spirochetes (bacterium).  The symptoms occured within the first couple of hours and included; fever, chills, low blood pressure, headaches, hyperventilation, vasodilation, flushing, stiff joints (rigor), muscle pain (myalgia), panic attacks, skin sores, and tachycardia.  All symptoms observed were believed to be a cause of the increase in inflammation, albeit symptoms that will either …
